First: Shameless Pimp

My friend who came over last week and made meatballs has an Uncle in the Pasta Sauce business.  Words cannot describe how fab Bove's sauces are.  Whole Foods used to carry these sauces - when they dropped them for a Whole Foods store brand we women of the CNN Washington Bureau wrote nasty letters and swore never to shop there again.

You can order online at www.Boves.com.  Everything is wonderful, but their Vodka Sauce is unbelieveable. 

This recipie is not that - but is still pretty darn good as second choice.  I often make it, and then add sweet Italian sausage which I have browned and then cut into little circles.  Served over penne pasta it makes a really good hearty winter meal.

So - if you can't get Bove's

Spicy Vodka Sauce

Spicy Vodka Sauce

1/4 cup olive oil

4 cloves garlic chopped

Pinch o salt

1/2 generous teaspoon red pepper flakes

1  28 oz can crushed tomato puree - (use and Italian brand, not Hunt's)

1/4 cup dried parsley

2  Tablespoons vodka

1  cup heavy cream

Brown the garlic and salt in the olive oil, then add the red peppers, tomato puree.  Turn down heat and let this simmer till the sauce thickens, usually 15/20 minutes.  Add the vodka and cream and let simmer longer - MAKE SURE HEAT IS LOW as you want the ingredients to blend.

You can add meatballs to this sauce and simmer long enough to blend flavors.

OR do wht sweet Italian sausage/penne pasta thing.  Either meal is great.
